Method of preparation
1
Activating the yeast
Dissolve the yeast in the warm fresh milk together with 1 tbsp of flour and the inulin. Mix well and leave in a warm place for 10–15 minutes until the mixture froths.
2
Kneading the dough
In a large bowl, mix the flour and Sweetly Stevia crystal sweetener. Add the eggs, melted butter, activated yeast, vanilla and lemon zest. Knead a soft and elastic dough (about 10–15 minutes).
3
First proving
Cover the dough with a cloth and leave it to prove in a warm place for 1–2 hours until it has doubled in size.
4
Shaping
Once the dough has risen, add the raisins. Divide it into three equal parts, shape them into ropes and braid them together.
5
Second proving
Place the kozunak in a baking tin lined with baking parchment. Cover and leave to rise for another 30–40 minutes.
6
Baking
Brush with a beaten egg yolk mixed with 1 tbsp of fresh milk, sprinkle with nuts and bake in a preheated oven at 170°C (without fan) for 40–45 minutes, until golden brown.

Tips:
• Use flour with a high protein content (minimum 13 g) for better structure.
• If you prefer a sweeter taste, increase the amount of sweetener to your liking.
